THURSDAY'S President of the Day at the Urdd Eisteddfod in Denbigh is top chef Bryn Williams.
Hailing from Denbigh in North Wales, Bryn Williams learnt to appreciate food and its origins from an early age. He has worked in some of the most prestigious kitchens in London. He has worked under Marco Pierre White at The Criterion, Michel Roux at Le Gavroche for three years and he was senior-sous at The Orrery for four years.
Bryn is now the Chef Patron of Odette's, taking over the property in October 2008. Bryn also is at Porth Eirias, a beach-front Restaurant, Café & Bar on the North Wales Coast.

What is your favourite memory of the Urdd?
Glan-llyn! I loved Glan-llyn. Making unforgettable memories and new friends. I still love Glan-llyn!
Did you ever compete/ win in a competition at the Urdd Eisteddfod?
I remember the folk dancing, and wearing blue for competing at the Rhyl Urdd Eisteddfod, but I can’t remember the year.
Has the experience of competing been useful in your professional life?
The experience of being on stage, in front of a live audience, gives one confidence as they grow up. Doing live sessions and live TV are now part of my everyday work life.
Which competition is your favourite to watch at the Eisteddfod?
I love the fact that a cooking competition is now part of the Eisteddfod. It is so important to teach children these skills and competing a good experience. Another competition I enjoy watching is the folk dancing (dawnsio gwerin), though I used to call it silly dancing (dawnsio gwirion)! Only as a joke of course.
What is the best thing about the Urdd in your opinion?
The Urdd has provided unforgettable experiences for children for 100 years, not many organisations can say that. On to the next 100 years!
What does it mean to you to be President of the Day during the Urdd’s centenary year?
I was delighted to be asked. Everyone who has been a part of the Urdd, loves the Urdd and it was a privilege to be invited to be President of the Day. I’m really looking forward, especially to the Triban Festival. The line-up is unbelievable and my old friends Eden are performing too, I can’t wait!
